Elaboration:
It is the perfect balance between soil and veil with 8 years of aging following the traditional system of criaderas and solera. Only two casks were selected from the total solera.
Tasting notes:
Golden color with amber reflections. Light and generous tears. Complex nose, very sharp, powerful "flor" veil, chalk, hazelnuts, aromas of withered flowers, saline and minerals. Intense mouthfeel, slightly creamy, saline and very savory. Its finish is impressive, resounding and balanced, with iodized notes, toasted almonds, aldehydes and dried flowers. Round and enveloping aftertaste that clearly marks its origin from Albariza land nuanced by the greatness of biological aging. It is the purest definition of an old Fino.
Pairing:
Fino with an ideal character to accompany classic dressings, sausages and light cheeses. Vegetables, white meats or grilled fish will also be a perfect accompaniment to this wine, always served cold and in a tall fine crystal glass.
