The process of making the Wine Dalmau begins with a selection of the best paid grapes Canas, Centennial 9-hectare vineyard located in the middle-high part of the YGAY FINCA DE MARQUÉS of Murrieta ??Strong>, 465 meters altitude. Used grape varieties are 82% Tempranillo, 15% Cabernet Sauvignon and 3% Graciano. Already in the winery, the Tempranillo ferments in small stainless steel tanks and the Graciano and the Sauvignon Cabernet in a small oak tino. The set remains 23 months in new barrels of Allier French Oak.
Tasting note:
Your nose is defined by deep aromas of Mature black fruit with features of balsamic, black spices and minerals. With body, juicy tannins and a spicy final. Powerful, round and solid.
Pairing:
Meat plates with sauces and farses (as sirloin with foie), powerful smoked dishes (such as smoked eel) or black chocolate desserts Bitter.
Service:
Serve or decant about 20 minutes before enjoying it. Serve at a temperature between 16º-17ºC to favor the aeration of wine and be able to enjoy its aromas maximum.
