Elaboration:
Vino PSI is made with grapes Mostarily from Fine red (Tempranillo) of old strains of an average age of more of 30 years grown in microparels of the small pingus domain cellar. Maceration and fermentation occur in cement deposits, to enhance the aromas of the fruit, and completely naturally, without yeast added. The aging is produced in cement deposits, in large oak and barrels tubs used.
Tasting note:
Cherry red color with violet edges. High layer and fine tear. In the nose presents aromas of fruits of the forest, red fruits such as currants or raspberries. Soft notes to vanilla and very subtle spices of the barrel. On the palate is a intense and juicy wine. Red fruits as strawberries and raspberries are the protagonists, although we also find some specied notes.

Roasted red meats, civet, stews, cured cheeses, Iberian ham of acorn, hunting Feather, hair hunting, red meats with sauce.
