Description
The legend of Tokaj has grown in its four hundred years of history; but it was not until 1630, when the greatness of the Oremus vineyard was first spoken of. Today, it is the most universally recognized.
The production of Aszú wine (tear wine) is a meticulous process only possible in exceptional vintages and in particular conditions that favor the development of "Botrytis cinerea" (noble rot). For hundreds of years it has been made in the same way, by adding 3 baskets (puttonyos) with 25 kg of Aszú noble berries to a "Gönci" barrel (136 liters) of must. The Aszú berries are macerated for hours until they increase in size and then receive a light pressing. Fermentation takes place in new Hungarian oak barrels; a slow process that can take up to four weeks. Aging is completed in 220 and 350 liter barrels for 2 years and bottled for one year.
Aszú 3 Puttonyos is an elegant and fresh wine, with an acidity that makes it a vibrant and velvety wine.
CONSERVATION AND PREFERENTIAL CONSUMPTION
This wine is suitable for drinking now, but has a cellaring potential of approximately 15 years if kept in optimal conditions: 12-14 ºC and a relative humidity of 60%.
Best served at 9 ºC.
