The grapes used to elaborate this wine are the natives of the D.O area. Huelva: 90% Zalema and 10% Pedro Ximénez. From a sweet smelly wine, which will remain in contact with dehydrated skin (through the sunny) of the bitter orange of the Doñana region. This maceration will last at least 8 years on the mother in the vessels in the basements of our wineries, so that the wine acquires the aromas of the fruit.
mahogany , between tile and chestnut, orange tonality. On the nose it is wide of intensity and persistence. Clean aroma, with fruity permanence scale, especially bitter orange. Abocated, smooth and at the same time mature in the mouth, tightened with a strong orange persistence on retronasal road.
Ideal in desserts of chocolates and truffles. Great in the Suflés and Chocolate Coulants. For his wealth in nuances and contrast we recommend his pairing with Foie, smoked and blue cheeses. It is also used in high-end kitchen, for its good reduction, different rooms and mousses. Ideal to combine with certain cocktails. Advisable in gatherings and dealers.
