Elaboration:
The grapes go directly to the press where, by means of a slight pressure, the flower must is obtained. Once the must is obtained, a rapid settling is carried out by flotation, which allows to obtain a clean and crystalline must immediately. It begins to ferment in stainless steel tanks with selected yeasts and controlling the fermentation temperature between 14 and 16ºC. The mixture of the two varieties, 50% Viura (Macabeo) and 50% Chardonnay, is produced after the end of the alcoholic fermentation. A monthly bottling is carried out to guarantee the freshness and youth of this sparkling wine.
Tasting Notes:
Pale yellow with greenish tones. High aromatic intensity of varietal character. Very fresh fruity aromas with floral bone white fruit notes. Entrance in a very pleasant mouth, very alive, fresh, young man with a very voluminous and sweet mouth step, leaving a very long mouth finish and with the memories of the seasoned fresh grape.
