100% Chardonnay From biodynamic agriculture. The ability to adapt this variety is its strong point, and in more scorpi shows elegance and the finesse with which one day arrived from France. It is used exclusively "Tête de Cuvée", the first pressing of the grape. Fermentation, spontaneous, is carried out between 14 ° C and 15 ° C for 43 days. This represents a time much higher than usual, thus obtaining a significant glyceric content.
