The French grape variety Sauvignon Blanc, with which this monovarietal is made, was introduced by Marqués de Riscal on wheel In 1974 and is currently one of the main varieties of grapes of the origin denomination. After a cold maceration period and after the extraction and clarification of the must, the slow fermentation is carried out at a controlled temperature between 13 ° C and 15 ° C, to protect the primary aromas so peculiar from this variety. Once the fermentation is finished, the wine remains in contact with its fine lees, with the intention of increasing the feeling of volume in the mouth and improving its aging capacity.
