Elaboration:
Monovarietal Verdejo wine, a versatile grape variety, of great character and personality, which is very well adapted to the extreme conditions of the area, which allows the elaboration of fresh white wines or fermented in barrel. Once the alcoholic fermentation is finished, the wine remains in contact with the lees in stainless steel tank between 1 and 2 months. The lees that are deposited at the bottom of the tank are moved weekly with nitrogen (batonnage).
Tasting note:
Bright straw-yellow wine. As it corresponds to the variety of Verdejo, on the nose presents a high aromatic intensity, with scents of fennel, white flowers and nesting notes and fresh grass. On the palate has a clear and fresh feeling, with a typical persistent ending of the variety resulting from long and pleasant swallow. All in all, it is shown as a fresh and balanced wine.
Pairing:
This wine pairs well with fish, seafood, ham, pasta, chicken and meat cold.
