Description

Elaboration:

Night harvest, at dawn, taking advantage of the lowest temperature of the day to keep the fruit of the Verdejo grape as fresh as possible. Protection from oxidation through the use of dry ice. Gentle destemming and vatting at a low temperature to facilitate skin maceration and prolong it over time. Bleeding Static cold racking for 36 hours, approximately. Transfer of the clean must to fermentation tanks with the addition of specific yeasts to obtain the characteristics of the variety.

Tasting note:

White wine made from the green variety. Night Vintage, at dawn, taking advantage of the lowest temperature of the day to preserve as fresh as possible.
