Description
WINEMAKING:
Made from old vineyards on ungrafted vines, in typical goblet and located on the Jumillano plateau at an altitude of over 700 m, protected by the different mountain ranges of the valley, Carche, Buey, Larga.
The grapes are harvested by hand at a cool temperature and made in rotating vats after a previous destemming without breaking the grapes, controlling the fermentation temperature to extract the maximum potential. Aged in new medium toasted American oak barrels for 24 months and then continued in the bottle after racking and with a very gentle and respectful filtration to preserve its organoleptic characteristics. Unclarified.
TASTING NOTES:
High robe and ruby colour with a nice garnet rim. When the glass is moving, it is slow and glyceric.
On the nose, the intensity of ripe black fruit with hints of jam is surprising. Notes of prunes, figs, blueberry jam, surrounded by a framework of sweet and toasted tones such as vanilla or caramel from the barrel that combines particularly well with the fruit. The wine evolves and opens up in the glass with hints of undergrowth and petricor.
Smooth and slightly fresh on the palate, it is full-bodied and sweet on the finish with ripe, sweet tannins. It reveals a great balance and complexity where the aromas of black fruit, toast and spices are openly exposed and integrated. The aftertaste is long with hints of candied black fruit and vanilla.
Optimum serving temperature: 16 - 18ºC
FOOD PAIRING:
Pairs well with beetroot or lemon dishes, whether sweet, sour or spicy.
