Pago de Carraovejas 2021 is a reflection of the valley to which it owes its name; an interpretation of the different textures of its slopes and the moor that dominates it. The unique identity of Pago de Carraovejas arises from a site of more than one hundred vineyards divided according to different soils, exposures, vineyard orientation and training systems. Precision viticulture and tailor-made winemaking. Pago de Carraovejas 2021 blends the three varieties present in the estate: 92% tinto fino, 5% cabernet sauvignon and 3% merlot. Balance in an exceptional cycle

The 2021 vintage was characterized by a winter marked by high rainfall, which favored the vineyard's vegetative balance, developing homogeneously. The vineyard was worked with spontaneous and sown plant covers, which helped to control the vigor of the vines. Budbreak took place at the end of April without any climatic or sanitary incidents. The vines did not encounter any interference in the development and evolution of the buds, which resulted in very good yields that were balanced thanks to the thinning technique. The harvest was long due to occasional periods of rainfall; it began on September 22 and ended on October 14.

Pago de Carraovejas 2021 is a reflection of the valley to which it owes its name. An environment in which the vines climb the slopes to the moor to form a unique landscape. More than a hundred different plots, resulting from one of the first vineyard soil studies in the country, are worked separately thanks to precision viticulture. The different textures of limestone loams, clays and sandstones force the vines to make an effort to self-regulate and give the best of themselves. The ecological philosophy in viticulture and the specialization in the different pruning techniques achieve an extraordinary balance in the vineyard. Meticulous vinification by parcels

The grapes for Pago de Carraovejas 2021 were harvested by hand after an initial selection of clusters in the vineyard. Subsequently, in the winery, a double selection was made: of clusters and berries. Gravity must production allows maximum respect for the raw material. The vatting process is carried out in a meticulous manner. During the fermentation process, indigenous yeasts and lactic bacteria from our estate were used. The wine was aged in 225 and 600 liter French and American oak barrels for 12 months. The entire process was marked by precision and care in every detail. For greater protection, the wine contains sulfites. Finally it was clarified with natural egg white and bottled in the spring of 2023.
